Protein and Oat Energy Bites

Energy bites are somewhat similar to granola bars, but in a smaller, bite-sized form. I usually make them with some combination of oats, nuts or nut butters, dried fruit or similar ingredients. I have found these homemade snacks are perfect for tossing into my kids’ lunchboxes, or even into my purse/bag for when we’re on-the-go.

If you are like me and your busy schedule has you going from work to school to activities before heading home for dinner and you need a little something to tide your kiddos (or yourself!) over before dinner, this is hands down the best snack. It sure beats anything you can get on the store shelf, and it will leave them just the right amount of satisfied without spoiling dinner.

Loaded with vitamins, minerals, and antioxidants, oats are incredibly nutritious. Plus, they provide higher amounts of fiber and protein than many other grains.

Oats contain some unique components. In particular, this includes the soluble fiber beta-glucan and antioxidants called avenanthramides.

A few of the benefits of oats include helping lower blood sugar and cholesterol levels, protection against skin irritation, and reduced constipation.

In addition, they have properties that make them a weight-loss friendly food including that they’re so filling.

Bottom line, oats are among the healthiest foods you can eat. Combined with healthy fats from nut butter and coconut oil, natural sweetener from agave nectar, and protein from BioTrust protein blend, and you have a healthy and delicious powerhouse snack!

Protein and Oat Energy Bites

Ingredients:

  • 1 cup steel-cut or old-fashioned oats
  • 3/4 cup peanut butter
  • 2 Tbsp agave nectar
  • 1/2 Tbsp coconut oil
  • 2 scoops Vanilla Cupcake Platinum1 protein powder
  • 1 tsp vanilla extract
  • 1/4 cup mini candy-coated pieces (like SunSpire SunDrops)

Directions:

  1. Place all ingredients except the candy pieces in a stand mixer bowl and mix well.
  2. Add the candy pieces and stir them in by hand, so they don’t get broken up.
  3. Roll into balls about 1 inch in diameter.
  4. Store in refrigerator in a covered container.
  5. Enjoy!

Chef Note: If you have a nut allergy, opt for soy or sunflower butter in place of nut butters or replace nuts with seeds.

Chef Note: Tossing in some chocolate candies will delight any kid, or you could also use chocolate chips, cocoa nibs, dried fruit, or coconut flakes.
