Gin Khao Yung? If you aren’t fluent in Thai, this means “have you eaten yet?” It’s a typical question asked from Thai people, as they value their food and use wholesome ingredients, including a variety of fresh fruits and vegetables.

In traditional Thai cooking, almost every dish combines all four seasonings—salty, sweet, sour, and spicy. It is customary when dining that each person orders their individual dish to then share all around the table.

Fun Fact: Despite dishes being served with chopsticks when dining out, most Thai people prefer to use utensils to consume their meals.

A recent survey conducted by the Office of the National Culture Commission reported one of the top ten Thai dishes ordered in restaurants is Kaeng Khiao Wan Kai, which is another name for green chicken curry. If this is making you hungry for Thai cuisine, you may be thinking it’s time to head to your local Thai restaurant. After all, it’s not like you can cook something like this at home. How many times have you tried to duplicate a restaurant version of your favorite dish yet fell short?

Keto-Freindly Green Chicken Curry Recipe

Ingredients:

  • 3 leeks
  • 1 medium red onion
  • pinch of (truffle) salt
  • pinch of saffron (optional)
  • 1 Tbsp green curry paste
  • 1 Tbsp basil
  • 1 Tbsp ginger
  • 1 Tbsp lemon grass
  • 1 cup butter
  • 1 cup coconut oil
  • 3 jalapenos, roughly chopped (w/seeds)
  • 1 cup chicken stock
  • 14 oz coconut milk
  • 1 lb chicken tenders, sliced thin
  • 1 lime, squeezed
  • 1 package of riced cauliflower (try the cauliflower crumbles “fried rice” blend!)
  • 1 package finely chopped cabbage
  • 1 package of broccoli salad

Semi-Homemade Chef Hack: By purchasing already cut and washed cauliflower, cabbage, and broccoli, you are saving a ton of time in the kitchen and leaving more time to enjoy your delicious chicken curry recipe.

Directions:

  1. Sweat the leeks and onions (i.e., cook them over low heat until they’re translucent and release their liquids but don’t caramelize).
  2. Add other herbs and curry paste.
  3. Melt butter and coconut oil.
  4. Add jalapenos and bring to a boil.
  5. Add chicken and continue cooking until chicken is cooked through.
  6. Finish with lime and (fresh) basil to taste.
  7. Cover cauliflower and cabbage with green curry and top with broccoli salad for extra crunch.

Option: If you would prefer to serve this chicken curry recipe hot, you can steam the cauliflower rice and cabbage.
