“An apple a day keeps the doctor away” isn’t just an old wives’ tale. Apples contain Vitamin C and antioxidants, which support the immune system among numerous other benefits, so why not make a healthy apple tart and allow yourself to have a guilt-free dessert?

This is such a super simple recipe, and you can use almost any firm fruit in season, such as pears, peaches, apricots, plums, or rhubarb. I am partial to apples, especially this time of year, and not just any apples, I really enjoy the Granny Smith variety.

I created this crust using almond flour and erythritol sweetener to keep things low in carbs, and by combining it with melted Kerrygold butter, there is no need to chill it ahead of time. It stays flaky, yet crisp, and complements the tartness of the apples, offering a nice balance.

Topping this healthy apple tart recipe with some whipped heavy cream mixed with BioTrust Platinum Premium Grass-Fed Whey Protein really completes the dish.

Healthy Apple Tart Recipe

Ingredients:

For the Crust:

  • 6 Tbsp Kerrygold grass-fed butter, melted
  • 2 cups almond flour
  • 1/3 cup erythritol sweetener
  • 1 tsp ground cinnamon

For the Filling:

  • 3 cups thinly sliced Granny Smith apples (peeled and cored)
  • 1/2 tsp lemon juice
  • 1/4 cup butter
  • 1/2 tsp ground cinnamon
  • 1/4 cup erythritol sweetener

For the Topping:

Directions:
1. Preheat the oven to 375 degrees.

For the Crust:

  1. Combine the melted butter, almond flour, sweetener, and cinnamon in a medium-sized bowl.
  2. Stir with a fork until well combined and crumbly.
  3. Press the crust dough firmly into the bottom and about ½ inch up the sides of a 10″ springform pan.
  4. Prebake the crust for 5 minutes.

For the Tart:

  1. Combine the sliced apples and lemon juice in a medium bowl.
  2. Lay the sliced apples evenly across the bottom of the crust in a circular (or other) pattern. Press the apples down lightly when done.
  3. Combine the butter, cinnamon, and sweetener in a small bowl and microwave for 1 minute. Whisk until smooth and brush or spoon evenly over the top of the apples.
  4. Bake the tart for 30 minutes at 375 degrees F.
  5. Remove the tart and gently press the apples down flat with the back of a spoon or spatula.
  6. Reduce the heat to 350 degrees F and bake the tart for another 20 minutes.
  7. Remove from the oven.

For the Topping:

  1. Combine the whipping cream and protein powder in a bowl, and mix with hand mixer (or NutriBullet®) until well combined.
  2. Add dollops onto individual slices of apple tart before serving.
  3. Sprinkle with cinnamon.
  4. Enjoy!

Chef Notes: I have also made this healthy apple tart recipe using coconut flour and coconut sugar, and it came out just as delicious. I have also used both Vanilla Cupcake Protein blend and Apple Pie Protein Blend. Really, any of the protein blends would be remarkable in this.
